I still can’t believe I just started eating quinoa! It was perfect in this summer salad. And I obviously have a lemon obsession too. But seriously, I just love this grain. So many fun ways to use it!
We made this recipe Friday night to go with dinner at the beach. I left out the cilantro the original recipe calls for. Not really the hugest cilantro fan. I am a firm believer guacamole does not need it. Cayenne pepper all the way. Anyway, this salad was a home run!
Lemon Quinoa (Cilantro) Chickpea Salad
- 1/2 C. dry quinoa
- 2 C. vegetable broth
- 1 can garbanzo beans (drained and rinsed)
- 1 c. cherry tomatoes cut in half
- 2 avocados diced
- 2 C. spinach
- 1 bunch cilantro (I omitted)
- 1/4 C. onion
- 2 small cloves garlic
For the dressing:
- Juice of 2 lemons (I just used 4 tbsp. lemon juice)
- zest of 1 lemon (omitted)
- 2 tsp. dijon mustard
- 2 tsp. olive oil
- 1 tsp. agave nectar
- 1/2 tsp. cumin
- dash of salt and pepper
Cook the quinoa according to the box instructions, then let cool. I forgot my food processor at home, so Mom just chopped up the garlic, spinach and onion by hand (impressive, I know!) You basically just put all the ingredients together, and pour the dressing on top and you are done!

I am already itching to get back to the shore house next weekend. I need to find some new summer recipes since I’ll be down ALL next week. Plenty of time for more experimenting with quinoa and lemon! We ate at my favorite place on the island last night, Livin’ on the Veg. The entire place is vegan, and the food they make is top-notch. Dan even finally ate there! He had a seasoned seitan sandwich with avocado and “cheese” sauce. He said he didn’t want it to ever end. My burrito was, as always, phenomenal. Next time I want to try out their black bean burger. Next week!
I am also excited to get some pilates classes in next week. The only exercise I got this weekend was bike riding and walking to happy hour, so that needs to change!
On a side note, I am really loving the Tone It Up videos lately. The Sunkissed Abs workout is awesome, and the Goddess Routine has some fun moves (like warrior) that really make my thighs burn.
