Creamy Lemon Pasta with Spinach & Tomatoes

This past weekend was spent relaxing at our favorite place in the world, Long Beach Island. It was a perfect Memorial Day weekend! Happy hour on the beach, reading a book in the backyard, bike rides, BBQing and, of course, trying new recipes! We tried a new pasta dish for lunch on Saturday, and it was perfect for 4 people. Everyone loved it!

Creamy Lemon Pasta with Spinach & Tomatoes

  • 1-1/2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream (I used organic half & half since I couldn’t find light cream)
  • 2 lemons, zested and juice reserved
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound pasta
  • 3 ounces baby spinach
  • 1/4 cup grated Parmesan
  • 1/2 pint grape or cherry tomatoes, halved

Set a large pot of water to boil.

Heat the olive oil in a medium saucepan over medium heat; add the garlic and cook for a minute. Add the cream, the lemon zest and juice, salt and pepper. Bring to a boil, then lower the heat and simmer for 10 minutes, until it starts to thicken.

Meanwhile, add some salt to the boiling water and add the pasta; cook according to the directions on the package, stirring occasionally.

Drain the pasta and place it back into the pot. Immediately add the cream mixture and cook it over medium-low heat for 2-3 minutes, until most of the sauce has been absorbed in the pasta.

Add the spinach, Parmesan, and tomatoes (I kept the heat on low to help the spinach along). Toss well until the spinach has wilted. Season to taste, and serve hot.

This recipe is definitely a keeper! I actually also made it tonight with whole wheat pasta (I halved the recipe for just Dan and myself. I’m so smart!) Also, according to MyFitnessPal, this recipe is only about 300 calories per serving (with the half/half, not sure about using heavy cream).

I can’t wait to be back at the beach again next weekend. We got Ben a water table (for free, score!) and he loves being in the backyard splashing around. He also had a great time on the beach playing in the sand.

Happy Hour fun while Mommy was working!

We did some other cooking this weekend, not just BBQing. Mom made homemade guacamole (whoa), we made the best grilled chicken salad in the world, and roasted smashed potatoes.  Thank goodness we got lots of exercise to make up for all the eating we did. I even did a pilates class! The teacher was fantastic and I can’t wait to go back more often this summer.

I also tried quinoa for the first time today! I made these Quinoa Black Bean burrito bowls. Wow! So delicious! Plus, I didn’t really realize what a “superfood” quinoa was. I have to find more ways to use this amazing grain ASAP.
