I mentioned earlier our newfound love for pesto since coming back from Europe. Everything there is so FRESH. I figured instead of just going out and buying pesto, I’d attempt to make my own. It was so delicious. Dan and I spent our entire dinner talking about how amazing it was. And that was with Ben climbing on top of us and chattering away while we tried to savor each cheesy bite.
I wasn’t quite sure what to do once I made the pesto, so we decided on pizza! Can’t really go wrong with dough, cheese and pesto. And I was right. The Trader Joe’s pizza dough is phenomenol and such a steal at $1.19. Add some pesto, fresh mozzarella and a sprinkling of feta and you have a delicious gourmet pizza for two!
- 2 1/2 oz fresh basil
- 1/2 cup pine nuts
- 1/2 cup olive oil
- 1/3 cup grated Parmesan cheese
- 2-4 cloves garlic (depending on how strong of a garlic taste you like)
- Kosher salt and freshly ground black pepper to taste
Combine all the ingredients in a food processor and pulse to your desired consistency.
A few notes: Trader Joe’s sells organic basil in a 2.5 oz package, so this recipe was perfect. I also toasted the pine nuts in a skillet before putting them in the food processor.

Stay tuned for another guest post from Dan later this week, discussing running in general and more specifically the half marathon he ran in April, and the 5k we ran on Sunday. While Dan killed it with a time of 22:51 (44th place), I crawled over the finish line with Ben and Lucy around 53 minutes (790th place). Thank you, Lucy, for stopping to do your biz-ness during the race. That definitely did not help my time!
Dan has been such an inspiration since he started running 3 years ago, and it definitely makes me want to get in better shape so I can keep up. I love being a part of an active family, and that is what I want Ben to see as he grows up.
