Dan experimented with a new low-carb pizza recipe this weekend. It was impressive, to say the least. The crust was made of CAULIFLOWER. Yes, that white vegetable that no one really loves. Well, that is about to change!
- 1 very large head of cauliflower (about 4 cups total after steaming and processing)
- 4oz Garlic & Herb chèvre (soft) style goat cheese (found this at Whole Foods)
- 1 egg
- marinara sauce of choice
- 6-8oz shredded mozzarella (original recipe calls for goat mozz, but we could not find any)
- several basil leaves sliced thin (I also forgot the basil, will have to add next time)
