Happy {meatless} Valentine’s Day!

Today is Valentine’s Day, but that doesn’t mean much in our world now that the little man is here. Life went on as usual (music class, Target run) except Dan took the early train home (yay!) and we actually ate at the dinner table, thanks to Ben being in a super good mood and just running around keeping himself busy while we sat for 10 whole minutes!

I had read about this Gardein copycat from Katie and was excited to check it out for myself. We are huge Gardein fans…Dan uses it for a plethora of meals. On Sunday we made a Trader Joe’s stop, and picked up a package of these Chicken-less Mandarin Orange Morsels (really a steal at $2.99). We made some rice and voila! Dinner is served. This meal was SO GOOD. Dan and I both enjoyed it very much. It was just like takeout chinese without the fat, msg and questionable “chicken”.

On another exciting note, Ben ate a sandwich today. Don’t ask me why this was the cutest thing ever, but it was.

Right now we are making Champagne Cupcakes for 2 thanks to Tracey’s Culinary Adventures…can’t wait to see how they turn out!  We didn’t have champagne, but some sparkling wine from the weekend…should be interesting. We are still trying to use up the cream cheese frosting from the red velvet pancakes, so this seemed like the perfect chance.
